Il Palio’s wine cellar includes more than 400 selections that are almost exclusively Italian wines chosen to complement the cuisine of Executive Chef Adam Rose. The constantly evolving wine list includes wines from both renowned vineyards and lesser-known specialty vineyards.
For Sommelier Hailey Rose, wine is not just about enjoying a glass at dinner, it is learning about the geography and history of each bottle. Extensive research constantly adds to her knowledge of Italian wine. Hailey’s experience in some of New York’s top restaurants enables her to educate restaurant guests on Italian wines, as well as lessen the anxiety in ordering wine in a fine-dining atmosphere.
Expert food and wine pairings, exceptional wines-by-the-glass, a range of dessert wines, and Madeiras and ports are all added features that can help make any evening at Il Palio special.
